Three layers of chocolate fondant sponge, made with 77% dark chocolate, filled with a Morello cherry compote and covered with white chocolate Swiss meringue buttercream and dark chocolate curls.
(Please note that fresh cherries with stalks will only be used during the summer cherry season.  During other moths the top of the cake will be decorated with macerated pitted Morello cherries)
