Pear, Cardamom, and Cinnamon Cake with Salted Caramel

Three layers of light Genoese and pear sponge, drizzled with cardamom and cinnamon syrup, and filled and covered with a caramel Swiss meringue buttercream.  Decorated with pears poached in white wine and cinnamon, and finished with salted caramel, dark chocolate, and fruits in season.
